How To Make Red Velvet Cupcakes! 紅色絲絨杯子蛋糕 with Cream Cheese Frosting!

Today, I’m making Red Velvet Cupcakes! ops!! NOT SO RED! haha..but taste super delicious!!

Super MOIST fluffy Cupcakes with slight chocolate flavor and filled with juicy tangy blueberries fillings and topped with rich cream cheese frosting....absolutely yumyumyum....

♦ RECIPE

(30 mini silicone cupcakes moulds + 1 Six-inch Round Cake Tin)

Ingredients:

=RED VELVET CUPCAKES=

a) 3¾ Cups All Purpose Flour

b) 1½ tsp Baking Powder

c) ¾ tsp Salt

d) 6Tbsp Cocoa Powder

e) ¾ Cup (171g) Unsalted Butter

f) 1½ Cups White Sugar (i like moderately sweet, can add until  2¼Cups, if desired)

g) 3 Large Eggs (One at a time)

h) 1 Tbsp Vanilla Extract

i) ¾ Cup Cherry Jam (or) 1½ Cups Cherry Juice

j) 1½ Cups Buttermilk (add 1½ Tbsp White Vinegar into 1½ Cups milk, set aside for 10minutes)

k) 1½ tsp Baking Soda

l) 2-3 Tbsp Red Food Coloring

m) 1½ Tbsp White Vinegar

n) Blueberry Compote/Fillings (Optional)

Oven 350F/177C (20-25 minutes)

=CREAM CHEESE FROSTING=

a) 500g (2 packets 8oz) Cream Cheese

b) 1 Cup Icing/Powdered Sugar (I like moderately sweet, can add more to about 2 Cups, if desire)

c) 1tsp Vanilla Extract

d) 1 1/3 Cup (320ml) Whipping Cream (Cold)


♦食譜(30個 迷你紙杯蛋糕模具 + 1個 六寸圓蛋糕模具)

配料:

=紅色絲絨蛋糕=

a)3¾杯 面粉

b)1½茶匙 發粉

c)¾茶匙 鹽

d)6湯匙 可可粉

e)¾杯(171克)無鹽黃油

f)1½杯白糖(我喜歡中等甜度,可以添加直到2¼杯,如果喜歡)

g)3個大雞蛋(一次一個)

h)1湯匙 香草精

i)¾杯櫻桃果醬(或)1½杯櫻桃果汁

j)1½杯牛奶酪乳(加入1½湯匙 白醋 進1½杯 牛奶,放置10分鐘)

k)1½茶匙 蘇打粉

l)2-3湯匙 紅色素

m)1½湯匙 白醋

n)藍莓醬(可選)

烤箱350F / 177C(20-25分鐘)

= 奶油起司糖霜 =

a)500克(2包 8盎司)奶油干酪

b)1杯 糖粉(我喜歡中度甜,可以添加至約2杯,如果喜歡)

c)1茶匙 香草精

d)1 1/3杯(320毫升)奶油(冷)
